Zucchini Slice

Delicious Zucchini slice, packed with vegetables can be made in advance for nutritious lunchbox or afternoon snacks.

6 eggs
¾ cup wholemeal plain flour
2 large zucchinis, grated
2 large carrots, grated
½ cup corn kernels (no added salt)
½ cup peas
½ bunch chives, chopped
50g reduced-fat cheese, grated
Canola or olive oil spray


  1. Preheat the oven to 180°C.
  2. Beat the eggs and flour together until smooth. Add the remaining ingredients, except the cheese and mix thoroughly.
  3. Lightly spray 20cm x 30cm baking dish with oil. Pour the mixture into the dish, and sprinkle with cheese.
  4. Bake for 40 minutes or until set and golden on top.
  5. Serve hot or cold with a fresh green salad.
