Scrambled eggs with veggies

Ingredients:
2 eggs
2 tbsp reduced fat milk
¼ onion, peeled and diced
½ cup diced vegetables
(mushrooms, capsicum etc)
1 tomato, chopped
1 tsp olive oil
Method:
- Heat olive oil in a skillet or frying pan over medium-high heat. Add onion, mushroom and capsicum; saute until onions are transparent and capsicum has softened.
- In a mixing bowl, whisk together eggs and milk. Add egg mixture to vegetables and stir in tomatoes. As eggs are cooking, gently stir to scramble. Cook until eggs are set and serve immediately.
