Lamb wraps
Quick and easy lamb wraps for a meal in under 30 minutes!
Serves: 4

Cooking time: 20 mins
Ingredients:
- 2 tsp olive oil
- 500g lean lamb fillets
- 4 wholegrain tortilla wraps
- 1 large cucumber sliced
- 2 tomatoes sliced
- 1 red onion sliced into rings
- ½ cup tzatziki (reduced fat)
- 1 tsp dried oregano
- 1 lemon cut in half
Method:
- Pre-heat grill pan to medium. Brush lamb fillets with oil.
- 2. Cook lamb for 3-4 minutes on each side until cooked. Transfer to a plate and cover with foil to keep warm.
- 3. Slice and prepare cucumber, red onions, tomatoes.
- 4. Place tortilla on plate, spread with large tablespoon of tzatziki dip and arrange lamb and vegetables evenly onto the 4 tortillas.
- 5. Drizzle with fresh lemon juice and oregano.
- 6. Fold in the sides and firmly roll up each tortilla to enclose the filling.
