Healthy slice (and all things nice)

There’s nothing better than having a go-to recipe that you can add whatever bits and pieces you have left in the fridge into. **Cue applause for this healthy slice recipe here!**
 
 
This slice is a great way to add in an extra serve of veg to your day, or to get creative with other healthy ingredients. We have listed our favourite sweet and savoury options here, but the flavour combos are ultimately up to you! Remember, choose mostly healthy, ‘every day’ foods from the 5 food groups. Enjoy!
 
Base
  • 3 eggs
  • 1cup wholemeal plain flour
  • 1 cup low fat milk
  • Canola oil spray/ baking paper
Savory option
  • 1 large zucchinis, grated
  • 1 large carrots, grated
  • ½ cup corn kernels
  • ½ cup peas
  • ½ cup grated low fat cheese (sprinkled on top)
Sweet option
  • 2 mashed bananas
  • 1 teaspoon of cinnamon
  • ½ cup currents
  • ½ cup crushed walnuts
  • ¼ cup ricotta (crumbled on top)
Method
  1. Preheat the oven to 180°C (160°C fan-forced).
  2. Beat the eggs and milk together in a large mixing bowl. Add the flour, and (your choice of ingredients)
  3. Lightly spray 20cm x 30cm baking dish with canola oil or use baking paper. Pour the mixture into the dish.
  4. Bake for 40 minutes or until set and golden on top.
Note: These can also be cooked as muffins, frozen, and then taken as school snacks 😊
