Grilled Falafel balls

Ingredients:
- 1 small onion diced finely
- 1 garlic clove crushed
- 400g tin of chickpeas (reduced salt)
- 1 cup brown rice
- 1 bunch coriander, finely chopped
- 1 bunch parsley finely chopped
- 1 tsp curry powder
- ¼ tsp cayenne pepper (optional)
- 1 tbsp fresh lemon juice
- 1 cup wholegrain bread crumbs
- 1 tsp olive oil or olive oil spray
Method:
- Cook rice according to the packetinstructions.
- Saute onion and garlic in a non-stick fry pan with olive oil. Cook until golden, then set aside to cool.
- Place chickpeas into food processor and pulse to coarsely blend, add cooled onion and garlic, cooked rice, herbs, curry powder and continue to pulse until all ingredients are finely chopped.
- Place mixture in bowl, add lemon juice and half the breadcrumbs. Knead mixture until it forms a smooth doughy texture.
- Separate the mixture into small balls, roll in remaining breadcrumbs to coat.
- Heat non-stick pan with olive oil. Cook balls in hot pan for four mins, rotating until golden brown.
