Grilled Falafel balls

Ingredients: 

  • 1 small onion diced finely
  • 1 garlic clove crushed
  • 400g tin of chickpeas (reduced salt)
  • 1 cup brown rice
  • 1 bunch coriander, finely chopped
  • 1 bunch parsley finely chopped
  • 1 tsp curry powder
  • ¼ tsp cayenne pepper (optional)
  • 1 tbsp fresh lemon juice
  • 1 cup wholegrain bread crumbs
  • 1 tsp olive oil or olive oil spray

Method: 

  1. Cook rice according to the packetinstructions.
  2. Saute onion and garlic in a non-stick fry pan with olive oil. Cook until golden, then set aside to cool.
  3. Place chickpeas into food processor and pulse to coarsely blend, add cooled onion and garlic, cooked rice, herbs, curry powder and continue to pulse until all ingredients are finely chopped.
  4. Place mixture in bowl, add lemon juice and half the breadcrumbs. Knead mixture until it forms a smooth doughy texture.
  5. Separate the mixture into small balls, roll in remaining breadcrumbs to coat.
  6. Heat non-stick pan with olive oil. Cook balls in hot pan for four mins, rotating until golden brown.
