French toast with veggie topping

Prep time: 2 mins Cooking time: 7 mins
Ingredients:
2-3 small mushrooms
2 large tomatoes cut into thick slices
2 slices multigrain bread
1 large egg
1/2 cup reduced fat milk
Pepper – to taste
Method:
Heat a non-stick fry pan and cook the mushrooms. Add slices of tomato and cook until just beginning to soften. Remove from the pan and keep warm.
Break the egg into a shallow dish and mix with the milk. Lay the bread into mixture, turn over and then lay carefully into the hot fry pan.
Cook for approximately 1 minute, then turn over and cook the other side. Serve the French toast topped with the mushrooms and tomato.
